jen asked me for a potato salad recipe... here's what i had:
Danish Potato Salad
3lbs yukon gold potatoes
1/2 c freshly chopped chives or scallions
1/2 c fresh parsely
3 Tb capers
3 Tb white wine vinegar
1 Tb caper liquid (from the jar)
1 tsp dijon mustard (i put more in, i think)
1/2 c olive oil
cut potatoes into chunks, boil, drain
whisk together remaining ingredients and toss over cooled potatoes
